Following research projects in the food service sector conducted by Dr. Mikhaylin's team, a guide for implementing eco-efficiency in daily meals was developed. This guide is a tool for food service managers to help them develop meals with high nutritional quality and low environmental impacts, using eco-efficiency, an innovative approach. It offers general recommendations, concrete examples of how these recommendations can be applied, and a step-by-step approach to increasing the eco-efficiency of meals.
