EcoFoodLab is a laboratory under the supervision of Dr Sergey Mikhaylin, professor at Food Science Department in the Faculty of Agriculture and Food Sciences of Université Laval since 2017. Dr Mikhaylin is also a researcher at the Institute of Nutrition and Functional Foods (INAF), Dairy science and technology research center (STELA), International Associated Laboratory in Bioproduction of Natural Antimicrobials (LIAAN) and GastronomiQc Lab, Joint Research Unit.
Dr Mikhaylin's scientific program is structured around eco-efficiency and sustainability in the food sector. This main axis is integrated in all projects carried out in EcoFoodLab, notably projects that are related to high voltage electrical treatment (pulsed electric fields and electric arc), by-products valorization and waste management and also improvement of practices in the foodservice sector. Recently, Dr Mikhaylin has received a NSERC Alliance grant allowing him to develop different projects to increase the eco-efficiency in Canadian foodservices.
